Raw Corn Tacos
I keep eating these and thought you might enjoy them too. They take about 5 minutes to make – perfect for end of summer. Perfect for those transitioning to a living foods diet (out of a pranically -dead foods diet).
What you need:
- 3 sprouted corn tortillas (check fridge at Wholefoods)
- some creamy dressing ( I make a southwestern Caeser from the Rebar Cookbook)
- chopped cilantro
- sliced cucumber
- raw salsa (I know – nightshades. Ugg. But just a few bites – nothing to get all inflammatory about)!
- raw cheese (I get some from my milk lady down the road). Feta also works.
- 2 ears fresh raw corn – cut from husk.
- fresh sprouts or lettuce
I warm the tortillas in a skillet.
Pile on. Eat. Thrive. Add avocado if you need more fat (see blog post below).

The corn is sweet and cooling, cleansing Rasa Dhatu. The salsa if it’s hot will also burn kapha out of Rasa Dhatu and balance the agni from the cooling corn. The raw cheese is unadulterated protein, especially when the cow is loved. Fresh raw cheeses nourish vata through their unctuous quality, necessary at the end of summer, also antidoting (new word) the dryness of the corn tortillas. Raw cheese, avocado and caeser dressing reduce vata, Cilantro and cucumber reduce pitta, corn and salsa reduce kapha. If you want to be an Ayurveda Geek take the ALC!!!
Why is this important?
At the junction of the seasons the doshas have a field day. This is why people get sick. Say for example, pitta built up in your tissue over the summer. Then it gets dry with the fall, and now you have the hot and dry gunas building in your bodily tissue. Then say you eat pizza instead of Raw Corn Tacos. Whammy – your agni can’t handle it because agni takes on the light quality at the junction of seasons. You get allergies, or a head cold or a stomach bug. Poor you. Next time – choose Raw Corn Tacos.

Posted at 01:15h, 07 SeptemberI’ve been loving fresh raw corn this week. Slicing it off the cob and eating it with shredded zucchini, cherry tomatoes and a raw pinenut-basil pesto. And my kids LOVE those sprouted corn tortillas, they’re kind of a “treat” in our house so the meal you describe above is the girls’ idea of heaven!

Macadamia Nut Sour Cream
1 1/2 cups macadamia nuts (soaked for at least 2 hours, drained and rinsed)
1- 2 lemons
sea salt to taste
1/3 cup water
So in a blender add the drained macadamia nuts, the fresh squeezed juice of 1 -2 lemons (depending on taste), sea salt and enough water to just make the mixture continue to pull through the blender. Blend until smooth. Will have the consistency of ricotta cheese.
